The Legacy of Dr. Joy Spence, Master Blender
Joy Spence is the first woman to hold the distinction of Master Blender, with an illustrious career spanning 40 years. The historic Appleton Estate, creators of one of the world’s oldest barrel-aged rum. Every barrel of rum that leaves the estate is selected by Joy and her team.

This duo is adding a new experience to Negril’s food scene. Head west of the famous Seven-Mile Beach until you meet the dramatic sea cliffs of the West End to find Syd’s on the Rocks, a breezy poolside lounge and restaurant with unbeatable sunset views.
Co-owner, Sydney Watson, shifted from her career in finance to follow her dream of owning a restaurant. She opened Syd’s on the Rocks October 2025 with her business partner, Mcgarrit Franco.

Thoughtful touches show Syd's commitment to a great guest experience. Take a seat at the bar or settle in to one of the bamboo swing chairs with a beautifully crafted cocktail. Looking out at the Caribbean Sea, you may be lucky enough to catch sight of dolphins in the water. The balcony-style seating area is great for taking photos or watching the passing boats as you peruse the tempting menu options.
At the kitchen’s helm is Kimsan Austin. Bringing her experience working with luxury hotels for over 7 years, her flair for art comes across in her plating. Kimsan's creativity is on full display as the dishes at Syd’s are always camera-ready.

A riverside adventure with a Port Antonio legend, Miss Belinda

For decades, Belinda Eaton - known as 'Miss Belinda' - has welcomed visitors with bold and enticing flavors of traditional Jamaican cooking along the banks of the Rio Grande in Port Antonio. Known for her warm hospitality and hearty meals, Miss Belinda has served celebrities and statesmen. Her riverside restaurant is a highly anticipated stop for adventurers rafting down the river. Jamaican favorites like curry chicken, escoveitch fish, rice and peas, all cooked over an open fire.

River rafting is perhaps one of Jamaica's most iconic experiences. Floating on a bamboo raft along the winding river and though the island's lush rainforest, you'll get a taste of real island life as your raft captain shares the histories and stories of life near the Rio Grande.
